Chocolate Raspberry Cake with Mini Chocolate Chips and Raspberry Meringue Buttercream

This is one of the first cakes that I made, and shared with neighbors, that led to people asking me to make cakes for their special occasions. Family and friends have all really loved the combination of raspberry and chocolate, and many had not even tasted a meringue buttercream before. The freeze dried fruit adds a very raspberry flavor, as well as, natural color, and is light and rich, without being overly sweet. It’s such a great balance with a deep, dark chocolate cake. P

The BEST Blondies

This is how I do Buckeyes. They are not perfectly round, bite size confections. They are not evenly dipped and smooth. They are chunky and messy and sometimes even a bit ugly!! Paying homage to one of the greatest cakes of all time: Burnt Almond Torte 🙌🏻🙏 from Prantl’s Bakery, Pittsburgh, PA. After researching and collecting data, aka eating numerous samples, over the years, I have created my version. The cake layers are light and almond scented, the creamy, almond custard not too sweet, and the vanilla, almond buttercream is coated in the toasted, sugary, crunchy almonds 🤤 recipe coming soon to the site.

I had a blast teaming up with the lovely and talented baker, Miss Addy, as we combined forces to create her sisters 9th birthday cake!! It was a magical, funfetti, show-stopper 🥳💗 Thank you, Addy, for your design input! We only had to fend off no fewer than 3 unhinged boys while protecting the decorating process 😅 making cakes with and for kids is extremely special! Happy Birthday to Logan!! @ljbarrett10
